Baked French Toast - Jason Goodspeed
1 Loaf of French Bread
8 Eggs
3 Cups of Milk
3 Tbs Sugar
¾ tsp salt
1 tsp Vanilla Extract
Cinnamon
 
Sprinkle both sides of bread w/ cinnamon, grease a 9x13 pan and line bread along the bottom. Mix ingredients with blender, pour over bread, refrigerate overnight
Bake @ 350 for 45 min.

 

Awesome Potato Skins - Rick Morrison

 
Ingredients:
 
Potatoes
Bacon
Jalapeno Rings
Velveeta Cheese
Mozzarella Cheese
Extra Virgin Olive Oil
 
Make as many as you need
 
Wash potatoes then cut in half, bake until potatoes are cooked. While the potatoes are cooking cook the bacon ( I found it easiest to cut in small pieces before you fry it ) scrape out as much of the inside of the potato as you desire. Brush the potato with the oil and place under the broiler until they are slightly crispy. place some Velveeta on each skin then the bacon, some mozzarella and top with a jalapeno ring. Place back under the broiler until cheese is melted. Serve with sour cream and salsa on the side.

Firehouse Venison Rollups - Rick Morrison

 
Ingredients:
venison
bacon
jalapeno rings
pepper jack cheese
Italian dressing
 
Make as few or as many as you want. Use venison steaks or chops.
Cut meat into approx. 3" x 3" cubes, pound them out paper thin. Place a piece of cheese and a jalapeno ring on the meat roll up and wrap with bacon. ( hold together with a toothpick or shishkabob skewers ) marinate in Italian dressing for at least one hour. Cook on the grill or broiler just until the bacon is done.

Baked Macaroni and Cheese - Jason Goodspeed
 
Ingredients: 
1/4 cup butter or margarine
1/2 small onion minced
1/4 cup flour
1 3/4 cup of milk
1 Brick of Sharp cheese ( the sharpest you can find, vermont hunters )
1 TSP ground mustard seed
1/4 TSP black pepper
1 Dash of Cayenne Pepper
1/2 lb. Elbow Macaroni- Cooked al dente

Sauté onions in butter until transport. Stir in flour and cook for 2 minutes. SLOWLY stir in milk, cheese, salt pepper and mustard. Continue to cook over medium heat, stirring constantly, until thickened. Fold in prepared macaroni. Pour Mixture into a greased casserole dish and bake in a 400 degree oven for 25-30 minutes or until the top is golden brown.

Stuffed Mushrooms - Rick Morrison

 
Ingredients:
1 pkg whole fresh stuffing mushrooms
1 medium onion
2 cloves of garlic
1 sleeve of ritz crackers
1 stick of butter
1 block of extra sharp cheese ( I prefer cabots hunters select )
 
Take stems from mushrooms and dice them up, dice up onion, mince garlic, place all in a saucepan with the butter. Cook until onions are tender, add the cheese, when the cheese is melted crumble the crackers and add to the mixture. Remove from heat. Stuff the mushroom caps with the mixture, place on a cookie sheet and bake @ 350 degrees for approximately 45 minutes

Station #1 Goulash - Jason Goodspeed

Ingredients:
1 Lb of Ground Beef
1 Small Green Pepper
1 Large Onion
1 TBSP of butter
1 TSP of Salt
½ TSP of Black Pepper
4 Cups of Cooked Macaroni
1 Quart of Tomatoes
1 32-ounce can of Tomato Sauce
1 Squirt of Ketchup
1 Squirt of  Worchester sauce
 
Sauté green pepper and onions in margarine or oil. Add ground beef, salt and black pepper. Cook until browned. Add this to tomatoes, tomato sauce and macaroni in a large casserole dish.  Bake ½ hour @ 350 degrees. Serve with Garlic bread

Red Engine Sour Cream Coffee Cake - Bob Mooso
 
Ingredients:
1 Pkg Duncan Hines Yellow Cake Mix
1 Pkg Instant Vanilla Pudding
4 Eggs
½ Cup Crisco Oil
1- 8oz container of Sour Cream
 
Filling
¼ cup sugar
1-teaspoon cinnamon
½ cup walnuts (optional)
 
Combine cake mix, pudding, eggs, Crisco oil, and sour cream with electric mixer.
 
Filling – Mix sugar, cinnamon, and walnuts with a spoon.
 
Grease & flour a bundt pan
Pour 1/3 of filling mixture on bottom of bundt pan. Pour ½ of cake mixture into pan. Pour another layer of filling then pour other ½ cake mixture. Then pour rest of filling on top. Bake at 350 degrees for about 50- 60 minutes.
